Make 11 dishes from 1 cooking session
Do you scramble for dinner every evening, figuring out what to make every night less than an hour before you need? You try to plan a week's worth of meals but you run out of steam by Wednesday?
Let's learn a new way. Shauna Ahern, cookbook author and resident Relish teacher, will show you how, by cooking pork shoulder, a pot of braised beans, and a caesar dressing on a weekend afternoon, in only a couple of hours you'll have the makings for 11 meals that week.
Roast a 3-pound pork shoulder with salt, pepper, and olive oil. Then, make pulled pork tacos, a pork ragu for pasta, and a green salad with leftover pork, goat cheese, pomegranate seeds, and harissa dressing.
Make a pot of velvety braised beans in the oven. Later, you can make refried beans for breakfast tostadas, a white bean soup with kale, and a dish of sausage, greens, and beans over creamy polenta. Save the leftover polenta to make polenta fries the next day.
And with a container of homemade caesar dressing, you can make a shredded red cabbage caesar salad, Caesar-marinated roast chicken thighs, Caesar roasted vegetables, and tuna salad with capers and cornichons in lettuce cups.
Cook for a few hours and you have the makings of an entire week's worth of easy delicious meals.
