In this workshop you will train with Brisbane's own buttercream master. Carmilo's qualifications include a Bachelor of Industry Design, Camilo’s qualifications include a Bachelor of Industry Design, as well as over 10 years as a chef. His design of unique creations with buttercream and wafer paper will blow your mind. Camilo has stamped his mark as one of the most sought after buttercream designers in the world and in 2019 alone he will be teaching in the U.K, India and U.A.E as well as across Australia. Camilo is passionate about, and committed to, sharing his skills with cakers from around the world and is excited to be a part of the 2019 International Cake Show Australia.   • This fun filled class covers so many techniques and details. Suitable for all levels, this workshop offers the opportunity to train with one of our industry's best. In your miniature cake trio workshop Dell Khalil will show you how to take your cake design skills to the next level. In this On Day Hands-On Class you will use two cakes and one styrofoam dummy (this is to ensure you complete your class in one day). You'll learn how to master single cake tiers, 2 tier cakes and cover and decorate two cakes and a single Hexagonal styrofoam dummy. You'll set up and ganache cakes achieving sharp edges, cover cakes with fondant using the wrap/panel method. Add texture to fondant to achieve design effects, use edible wrap to add interest to your design. Use a variety of baroque mould trims to decorate your cakes. Paint with edible lustre Cover boards and risers and dust and arrange sugar flowers to complete your creation
  • Australia's Queen of cookie making Julia Day will personally teach this fun filled class designed to teach you all the tricks of the trade. You'll learn about shelf life, storage, allergy adaptations etc. She'll even share her favourite recipes and baking secrets with you. In this hands-on workshop you'll learn how to make, colour and pipe an array of fun cookies with royal icing. This valuable workshop isn't designed just to teach you how to make beautiful cookies on the day, its about giving you all the information and resources you need to be able to create gorgeous trouble free royal icing cookies for the rest of your life! WHAT YOU'LL LEARN: Baking Techniques (including how to reduce spreading and to achieve an even thickness) Making flavouring and colouring royal icing Learning royal icing consistencies for outlining and flooding Learn wet on wet techniques Decorate basic shapes and use multiple colours Use fondant moulds Learn simple painting/shading techniques Learn how to decorate in stages Learn about drying/storing/shelf life/allergy adadptation At the end of your workshop you'll take home a gorgeous box of 8 beautifully decorated cookies

Working on pre-covered polystyrene dummies (not cake), you will learn a myriad of skills and techniques including how to create and achieve luxurious dimensional lace designs.
