Hidden Flavors of Philippine Kitchen Dinner

Hidden Flavors of the Philippine Kitchen brings over 60 native ingredients and food products from the Philippines to five cities in North America with a burgeoning Filipino food scene.

This dinner will feature Chef Joaquin Soler of smalls. as their guest chef.

Through a series of dinners and guest chef collaborations, Amy Besa and Romy Dorotan of Purple Yam Restaurant are taking their Philippine-based chefs on a tour to Seattle, Philadelphia, Chicago, Toronto and New York, where Besa and Dorotan opened Cendrillon in 1995, and Purple Yam in 2009.

In each city, the Purple Yam team will collaborate with local chefs to bring a taste of indigenous Philippine flavors to new audiences - through special dinners, panel discussions, food demos, tastings and industry events.

Sponsored by the Cultural Diplomacy Unit of the Philippine Department of Foreign Affairs, the tour is part of a global series of events whose goal is to reintroduce Philippine food products that Besa describes as largely “unknown, ignored and undervalued”.
